The Spirit of the Sierra Madre
Mezcal Exiliado is sustainably produced by Temo García, using traditional methods he learned from his father, a legendary maestro mezcalero. The carefully selected agave hearts are wood fired over volcanic rock, stone ground, fermented in pine barrels, and distilled twice in copper at a small palenque in San Dionisio Ocotepec, Oaxaca.
Coyote
Agave Lyobaa, foraged wild, aged 12 years, 48.7% alc./vol, earthy with hints of sweet mesquite and spice and a lot of minerality. This spirit demands attention with its rich and complex flavors.
Jabalí
Agave Convallis, foraged wild, aged 10 years, 48.6% alc./vol., bright and vegetal, with a peppery finish. This mezcal was distilled three times to tame this notoriously difficult agave into a smooth sipper.
Tobalá-Tepeztate
Agave Potatorum (60%) and Agave Marmorata (40%), foraged wild, aged 15 and 25 years respectively, 48.3% alc./vol., with spicy fruit and overtones of buttery florals. The strong Tepeztate shines brightly through the sweet Tobalá, providing a superbly balanced spirit.
Espadín
Agave Angustifolia, sustainably cultivated, aged 7 years, 46% alc./vol., lightly smoked and smooth, designed to be equally enjoyable when sipped or served in cocktails.
Madrecuishe
Agave Karwinskii, foraged wild, aged 12 years, 47% alc./vol., featuring high minerality with vegetal and floral notes.
Tobasiche
Agave Karwinskii, foraged wild, aged 15 years, 47% alc./vol., with rich earth tones, flavors of dry herbs, and citrus peel.
